Lemon-Balm and Rosemary Salmon

This weekend's salmon was sponsored by Lemon Balm and Rosemary. They sound like fun garden-inspired friends to have in your kitchen, don't they?

I tried something new, I roasted the onions under the salmon along with rosemary and lemon balm. Prior to broiling the salmon, I also marinated it with these same herbs and some white wine. Once finished, I plated it over kale and I topped it with some cara-cara orange salsa.




The plating wasn't as neat yesterday... I wasn't careful and I broke the fillet. But the lemon balm on top is still pretty.
