Today I bring you, Sole-ful Sunday. I chose a classic --Ina Garten's Sole Meuniere Recipe. As you know, I usually try to use ingredients I have around for a complement to the fish-dish. Today that consisted of parsnips, carrots, onions, garlic, pearled couscous, scallions, and arugula. I roasted the veggies together with garlic in the oven, cooked the pearled couscous on the stove top and then tossed it all together with the arugula and scallions and a little dill. Once the fish was done, I laid that on top, and viola! The presentation is a bit messy this time but none-the-less, delicious!
